Since it's been so hot out, I don't want to turn my oven on for long periods of time. So quick pies and no-bake cakes are my jam right now.
This pie partially needs to be baked (just the oreo crust), but it is really simple and a perfect treat to bring to a party or BBQ. I hope you try it out and enjoy the chocolatey goodness!

Ingredients
For the Oreo crust:
26 Oreos (use the rest of the package for topping)
3 tbsp melted unsalted butter
pinch of salt
For the Filling:
1/2 cup sugar
3 1/2 tbsp cornstarch
2 tbsp cocoa powder
pinch of salt
3 cups of whole milk (try to use only whole! anything lighter will cause the pudding to be too loose)
6 egg yolks
8 oz semi-sweet chocolate (I like to use Baker's Chocolate)
2 tbsp unsalted butter
1 tsp vanilla extract
For Whipped Cream:
1 cup heavy whipping cream, very cold!
2 tbsp powdered sugar
Crushed/whole Oreos (using the rest of the package)
Method
Preheat your oven to 350 degrees.
To start the crust, add the Oreos to a food processor with the melted butter and salt. Pulse until the mixture is the texture of wet sand.
Firmly and evenly pat the crust mixture into a 9 in pie dish and make sure you are getting the crust up the sides as well.
Place the pie crust into the oven and bake for 12-15 minutes until fragrant.
Remove the crust and let it cool completely. You are done using the oven now!
Using a fine mesh strainer, sift the dry ingredients (sugar, corn starch, cocoa powder and salt) so there are no lumps. Then add it to a saucepan.
Slowly mix in the milk and egg yolks and begin warming this mixture on medium-high heat - stirring constantly!!
Cook the mixture until it has thickened and is at a low boil - you will see large bubbles (about 9 minutes)
Take the saucepan off of the heat and stir in the chocolate, vanilla extract and butter.
Pour the mixture into the prepared, cooled crust and let this come to room temp before putting it in the fridge.
Let the pie cool in the fridge and set for 6+ hours.
When you're ready to serve, whip the cream with powdered sugar using an electric mixer and decorate the top with the extra crushed Oreos.
