Paleo Banana Brownie

The idea for this paleo-friendly banana brownie popped into my head when I was craving chocolate but trying to eat healthy. It definitely hits the spot and there is NO added sugar (except for the chocolate chips), NO gluten, and NO added fat! I hope you try it out and enjoy!


Ingredients

  • 2 cups almond flour

  • 2 eggs

  • 1/2 cup sifted cocoa powder

  • 3 ripe bananas, mashed

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tbsp brewed espresso or strong coffee

  • 1/4 tsp salt

  • 1/2 cup mini semi-sweet chocolate chips

  • 1/2 cup coconut flakes (unsweetened)

  • Berries for garnish


Method

  • Preheat oven to 350 degrees. Prepare a pie dish or square baking dish by spraying it with cooking spray.

  • Combine the almond flour, cocoa powder, baking soda, baking powder and salt into a small bowl.

  • In a large bowl, combine the bananas, eggs and espresso/coffee.

  • Next, add the dry ingredients into the wet and fold together until combined.

  • Add the chocolate chips and coconut flakes.

  • Pour into the baking dish of your choice and bake for 35 minutes or until a cake tester comes out clean.
