  • Splash of water (1 tsp)

  • 3 egg yolks

  • 1 stick of butter, cubed

  • 1 tbsp lemon juice

  • Salt to taste

  • Cayenne pepper to taste

  • Over a double boiler using a metal bowl, whisk the egg yolks and splash of water vigorously until the mixture is very thick and smooth.

  • During this process, make sure your bowl is not too hot. Test it with your hand - if it’s too hot to touch, turn the heat down or remove the bowl from the double boiler periodically. This process takes about 10 minutes, so be patient!

  • Next, slowly add the butter in 3 batches while still whisking vigorously. Make sure the butter is completely melted before adding the next batch.

  • The final product should be thick and coat the back of a spoon.

  • Take the sauce off the heat and add in seasonings (cayenne, lemon juice and salt) to taste.

  • Keep in a warm place but do not leave on the stove until serving or the sauce will separate/break.
