Now more than ever we all have time to try out new recipes and perfect them, right? A difficult recipe that has very few ingredients is hollandaise sauce. It's all about the method and it is perfect to test out now! You can use it on much more than just Eggs Benedict too. Hollandaise sauce can go on vegetables, fish, use it as a dip... etc.
Below are the ingredients and method to perfect hollandaise sauce. Let me know if you tried it!
Splash of water (1 tsp)
3 egg yolks
1 stick of butter, cubed
1 tbsp lemon juice
Salt to taste
Cayenne pepper to taste
Over a double boiler using a metal bowl, whisk the egg yolks and splash of water vigorously until the mixture is very thick and smooth.
During this process, make sure your bowl is not too hot. Test it with your hand - if it’s too hot to touch, turn the heat down or remove the bowl from the double boiler periodically. This process takes about 10 minutes, so be patient!
Next, slowly add the butter in 3 batches while still whisking vigorously. Make sure the butter is completely melted before adding the next batch.
The final product should be thick and coat the back of a spoon.
Take the sauce off the heat and add in seasonings (cayenne, lemon juice and salt) to taste.
Keep in a warm place but do not leave on the stove until serving or the sauce will separate/break.
