I try to have cauliflower in my fridge at all times - it is so inexpensive and such a staple vegetable. I love that cauliflower can take on almost any ingredient or flavor you give it and is so much fun to experiment with! Here, I made a Parmesan "crusted" cauliflower side dish. If you are vegetarian, call it a main dish and serve it with some marinara sauce - yum!

Ingredients
1 head cauliflower
3 tbsp olive oil
Salt and pepper to taste
1 cup Parmesan cheese
2 tbsp fresh parsley, chopped
1/2 cup breadcrumbs
Method
Preheat oven to 375 degrees F.
Cut cauliflower head into medium sized florets. Place on a sheet pan covered with parchment paper (for easy clean-up). Add 2 tbsp olive oil, salt and pepper to taste.
Roast for 15 minutes.
While the cauliflower is roasting, mix Parmesan, fresh parsley and breadcrumbs in a bowl
Remove the cauliflower and sprinkle the Parmesan-breadcrumb mixture and stir using tongs or a spoon.
Next, drizzle the last tablespoon of olive oil onto the cauliflower and place back into the oven for 15 more minutes or until the crust looks golden brown.
