with an herb, lime aioli
This is a recipe for a healthier version of sweet potato "fries". The spiced used help create the effect of actual "fried" sweet potatoes. Go ahead and give this recipe a try - you will not regret it!
1 lb sweet potatoes
3 tbsp olive oil
1/2 tbsp paprika
1 tbsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1 tsp garlic powder
1/4 cup kewpie mayonnaise
juice of 1 lime
1 clove of garlic, grated
4 mint leaves, fine chiffonade
1/2 tsp dill, chopped
1 tsp salt
1/2 tsp black pepper
Start by preheating the oven by 400 degrees.
Wash the sweet potatoes thoroughly - you don't have to peel them, but if you prefer that's fine.
Cut the sweet potatoes into even sized wedges and place on a large sheet pan.
Drizzle the olive oil evenly onto the sheet pan and mix with your hands to make sure each wedge is coated.
Next, mix in a small bowl combine the paprika, salt, black pepper, cayenne pepper and garlic powder and sprinkle onto the sweet potato.
Place into the oven and roast for 30 minutes.
After the 30 minutes, broil for an additional 5 minutes then remove from the oven.
For the aioli, mix together the mayo, lime juice, mint, garlic, salt, pepper, and dill.
Serve together and enjoy!
