Wings Two Ways

This recipe for oven "fried" wings gives you an outcome of super moist wings with crispy delicious skin that would make you think they were fried! I made two of my favorite flavors - one is hot and one is mild. You can add any sauce you want though, that's the beauty of the recipe. Just toss in BBQ sauce or your favorite hot sauce and call it a day, but I really suggest trying out these sauces, they will be total crowd pleasers.


Honey Sriracha


Ingredients


For the wings:

  • 3 lbs frozen chicken wings, defrosted

  • 3 tbsp baking powder

  • 1 tbsp salt

  • 1 tsp freshly ground black pepper

  • 6 garlic cloves

  • 1 tsp rice vinegar

  • 1 tbsp sesame oil

  • 1 cup sriracha sauce

  • 1/2 cup honey

  • 2 tbsp soy sauce

  • sesame seeds for garnish


For the dipping sauce:

  • 1/2 cup sour cream

  • 1/4 cup plain Greek yogurt

  • 1 tbsp mayonnaise

  • 3 tbsp crumbled blue cheese

  • 1 tsp fresh dill, chopped

  • 1/2 tsp fresh mint, chiffonade


Method

  • Preheat your oven to 400 degrees.

  • In a large bowl, season the wings with salt and pepper. Next, sprinkle the baking powder onto the chicken wings and toss together. This will create a nice crispy crust on the wings as if they were fried.

  • Place wings on a wire rack with a sheet pan underneath so that they can get crispy on all sides. Roast for 20 minutes.

  • Meanwhile, start preparing the sauce. Grate the garlic into a large bowl and add the rice vinegar, sesame oil, honey, sriracha and soy sauce. Whisk to combine.

  • After 20 minutes, flip the wings and roast for another 20 minutes.

  • To prepare the sauce, add all ingredients into a small bowl and let sit in the refrigerator until you are ready to serve.

  • Remove the wings from the oven and carefully add them to the bowl with the sauce. Toss gently and place the wings back onto the sheet pan (this time without the rack).

  • Broil wings for 5 minutes so the sauce gets sticky.

  • Plate, garnish with sesame seeds and enjoy!


Lemon Garlic


Ingredients

  • 3 lbs frozen chicken wings, defrosted

  • 3 tbsp baking powder

  • 1 tbsp salt

  • 1 tsp fresh ground black pepper

  • 2 tbsp fresh rosemary

  • 1 tbsp fresh thyme

  • 10 cloves garlic, grated

  • zest of 1 1/2 lemons

  • Juice of 1 lemon

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 tbsp olive oil

  • 1/4 cup fresh grated pecorino romano cheese (for garnish)


Method

  • Preheat your oven to 400 degrees.

  • In a large bowl, season the wings with salt and pepper. Next, sprinkle the baking powder onto the chicken wings and toss together. This will create a nice crispy crust on the wings as if they were fried.

  • Place wings on a wire rack with a sheet pan underneath so that they can get crispy on all sides. Roast for 20 minutes.

  • Remove from the oven and toss the wings into the bowl with the lemon-garlic mixture.

  • Add back onto the sheet pan (without the rack this time) and roast in the oven again for another 25 minutes.

  • Remove from the oven, plate, and add the grated cheese and some fresh parsley for garnish. Enjoy!
